Because it's delicious. Quick. Easy.
And delicious.
And quick & easy. And time is seriously limited in my house these days, so I need all of the quick-and-easy I can get!
But I still want to make home-cooked meals, with fresh ingredients.
Life (and dinner) is just better that way.
And so is broccoli.
roasted spicy broccoli
(serves 4)

Ingredients:
- 2 heads broccoli, top part (florets) only (approximately 4 cups florets)
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1/4 tsp mint
- 1/4 tsp chili powder
- 1/4 tsp cumin
- 1/8 to 1/4 tsp nutmeg (to taste)
- 1/4 tsp salt (or more, to taste)
The Process:
Preheat the oven to 475 degrees F.
Rinse the broccoli and cut off the tops (the florets). Save the stems for soups or stews! Slice any larger florets in half or thirds, so that all pieces are of a (more-or-less) uniform size.
Mince the garlic.
In a large bowl, combine the broccoli, oil, garlic, and all of the spices. Toss well to coat, then pour the mixture into a heavy flat-bottomed roasting pan, or a large cast iron skillet.
Roast at 475 degrees F for 30 minutes, turning once.

Serve immediately.
